3 1/2 cup rhubarb, washed and cut into 1/2 inch pieces
2 eggs, slightly beaten
1 cup sugar
2 Tbsp flour
2 Tbsp lemon juice
1 deep dish pie crust

Directions:
Directions:
Preheat oven to 400 F
In a large bowl combine all ingredients.
Place pie dish on a rimmed baking sheet,
Pour ingredients kinto the pie shell, place in the oven;
reduce heat to 375 F. Bake until top and crust are lightly browned, about 1
hour.
Cool completely before serving, or you will have a difficult time serving a slice of pie.

Our family can hardly wait for rhubarb
season.
Since I get the rhubarb from my neighbor, the first pie goes to her, as a thank you for a season of rhubarb.
