CRUST: 1 cup cornmeal 2 tsp sugar 1/2 tsp salt 1/2 cup cream style corn (put the rest in the filling) 1 egg, slightly beaten 2 Tbsp vegetable oil
TOPPING: 1 cup cheddar like cheese, shredded sour cream salsa

Directions:Heat oven to 350 F. Heat 1 tablespoon oil in a 10-inch skillet, over medium heat. Add onion and green pepper. Cook stirring occasionally, until vegetables are crisply tender (2-3 minutes). Add turkey. Continue cooking, stirring occasionally, until turkey is no longer pink -5 to 7 minutes. Stir in beans, tomato sauce and seasoning mix. Set aside.
In medium bowl, combine cornmeal, sugar, and salt. Stir milk, egg and 2 tablespoons oil into cornmeal mixture, just until moistened. Press mixture on bottom and up sides of greased 9-inch pie pan.
Spoon bean mixture into cornmeal crust. Bake for 20-30 minutes or until set.
Remove from oven; sprinkle with cheese. Continue baking for 2 to 5 minutes or until cheese begins to melt. Let stand 5 minutes before serving. Serve with sour cream and salsa. |
