3 cups all purpose flour
1 tbsp baking powder
1 tbsp ground cinnamon
1 teaspoon salt
3 eggs
1 1/2 cups sugar
1/2 cup cooking oil
1 tbsp vanilla
2 cups chopped fresh, peeled peaches
1 cup chopped pecans

Grease the bottom and about 1/2 inch up the sides of 2- 8x4x2 inch loaf pans. Set the pans aside. In large mixing bowl, stir together flour, baking powder, cinnamon and salt. In a medium mixing bowl, beat eggs. Stir in sugar, oil and vanilla.

Add egg mixture to dry ingredients, stirring till just moistened (don't over mix). Fold in the peaches and nuts. Spoon batter into the prepared pans.

Bake 325º oven for 55-60 minutes or till wooden toothpick inserted near center comes out clean. Cool on wire rack for 10 minutes. Loosen edges; remove loaves from pans. Cool completely on wire racks. Wrap and store overnight for easier slicing.
