4 (8 oz) fillets such as snapper or tilapia
Kosher salt and pepper
8 ounces creme fraiche
3 Tbsp. dijon mustard
1 Tbsp. whole grain mustard
2 Tbsp. minced shallots
2 tsp. drained capers

Directions:
Directions:
preheat oven to 425º

Line a sheet pan with parchment paper.
Place the fillets skin on the pan and sprinkle with salt and pepper
Combine the creme fraiche, 2 mustards, shallots and capers, 1 tsp. of salt and 1/2 tsp of pepper in a small bowl. Spoon sauce evenly over the fish, making sure the fillets are completely covered.
Bake for 10-15 minutes until barely done. Make sure you don't over cook it!

Serve hot or at room temp with sauce from the pan spooned over the top.
