1½ pounds Fontina Cheese - rind removed and cut into 1 inch dice
¼ cup olive oil
6 cloves of thinly sliced garlic
1 Tbsp. minced fresh thyme leaves
1 tsp. minced fresh rosemary leaves
1 tsp. kosher salt
1 tsp. fresh ground pepper

Directions:

Preheat the broiler and position oven rack 5 inches from the heat
Distribute the diced cheese evenly in a 12 inch cast iron pan
Drizzle with olive oil. Combine the garlic, herbs and sprinkle over the cheese
sprinkle with salt and pepper
Broil 6 minutes or until cheese is melted and it starts to brown
Serve it right out of the oven ( cover the handle of the pan - it will be hot!) with crusty bread.
