1 diced onion
2 stalks diced celery
2 diced carrots
2 cloves minced garlic
3 tbsp butter
8 cups turkey stock
1 cup brown and wild rice mix
2 tbsp minced fresh parsley
4 cups diced cooked turkey
salt and pepper to taste

Directions:
Directions:
Saute' the onion, celery, carrots and garlic in the butter. Add the turkey stock, rice and parsley, bring to a boil, then reduce heat, cover and simmer for 1 hour. Add the turkey; cook for 5 minutes.

I usually make this after Thanksgiving and Christmas . If I do not have time I usually measure out and freeze the leftover turkey and make this in January.
