1 tbsp butter
1 onion, chopped
2 carrots, peeled and trimmed
1 bunch broccoli or 1 cauliflower (about 1 1/2 lbs)
4 cups chicken broth
1 tsp salt
1/8 tsp white pepper
1/4 tsp Mrs Dash original
1/8 tsp ground nutmeg (for cauliflower recipe only)
1 tbsp fresh dill
1 1/2 cups homogenized milk or 2% filtered milk

1. Combine butter and onion in soup pot and sauté on medium heat until softened, about 5 minutes. Cut carrots and broccoli into chunks using stems as well. If using cauliflower, break into florets. Add to onions along with remaining ingredients except milk.

2. Bring to a boil, reduce heat to low, cover and simmer about 30 minutes until vegetables are tender.

3. Purée with immersion blender. Add milk, stir, taste seasonings and adjust if necessary.

Delicious. Freezes well. Serves 6. I always triple this recipe as I don't like to see a soup pot half full! Triple all ingredients above except: Use 2 large cauliflower (make sure they weigh about 4 lbs total in the store; this will give you about 3 lbs after trimming), 1/2 tsp Mrs. Dash, 1/2 tsp ground nutmeg, 2 tsp salt, 1/4 tsp white pepper, 3 cups milk.
