1 - 2-3lb fryer chicken cut up
3.5 quarts water
1 onion, diced
2 tsp of Italian Seasoning
1 tsp of lemon pepper seasoning
3 cloves of garlic minced
4 bay leaves
3 chicken bouillon cubes
Kosher salt and black pepper - to taste
2 C sliced carrots
2 C sliced celery
2.5 C uncooked egg noodles
1 C mushrooms
3T fresh chopped parsley
1/3 C cooking sherry
2 tsp fresh rosemary chopped
Fresh pepper and sale

Optional ( not really optional, just do it)
1 C grated Parmesan
3/4 C heavy cream

Directions:
Directions:

1) Add all ingredients up to sliced carrots to soup pot and cook until chicken is tender 35-45 min. Remove Chicken and discard bay leaves. Pick chicken apart once cool enough
2) Bring stock back to a boil, add carrots and cook for 3 min, add celery and cook for 5-10 min, add egg noodles and cook according to directions, When noodles are done, add chicken, mushrooms, parsley , sherry and rosemary. Add parmesan and cream if you are using (which you are :)

Cook for another 2 min, season to taste.

Actually making this right now for the rain storm ahead. Make sure you have some nice hot crusty bread like French bread. If you won't eat all of it, cook the noodles separately and add to individual bowls or use rice as well since once you add the noodles it won't store well.
