2 large green plantains (about 2 cups pureed)
4 eggs
2 tsp vanilla
3 Tbs butter
¼ tsp salt
½ tsp baking soda
½ tsp baking powder
1 tsp cinnamon
Toppings of choice

Directions:
Directions:
1. Peel plantains and place in Vitamix with other ingredients.
2. Process until smooth and cook on griddle or waffle iron.
3. Eat immediately. Do not stack a bunch of waffles or they will get mushy.
4. If freezing, place directly into freezer off waffle iron as cooked, separated by foil or waxed paper.
5. Eat topped with strawberries, butter, syrup, vanilla ice cream, whipped cream, or all of the above.
