4 ripe avocados, pitted
1/4 c minced red onion
2 T lemon juice
1 clove minced garlic, par cooked in 1/4 t olive oil
1 T minced cilantro
1 T minced jalapeño
1 minced ripe tomato
1/2 can black beans, drained and rinsed
1/2 can sweet corn, drained
1 t salt

Directions:
Directions:
Soak minced onion in lemon juice for 5 minutes before adding other ingredients
Par cook minced garlic in 1/4 t olive oil (can be done in microwave in small dish separately) for 30 seconds
When garlic is cool, combine w/all other ingredients
Mash avacado leaving some chunks

Nestle 1 avacado pit in bottom of serving dish to prevent guacomole from turning brown

(All ingredients can be combined in advance, wait to add avacado just before serving)
