½ cup shortening
⅔ cup sugar
2 tsps grated lemon rind

1 beaten egg
3 Tbsp lemon juice
1 Tbsp water

1¾ cups flour
¼ tsp baking soda
½ tsp salt
¼ tsp cream of tartar

½ cup finely chopped pecans or walnuts

powdered sugar

Directions:
Directions:
Preheat oven to 350º

Cream shortening and sugar.
Add lemon peel and egg.
Stir in lemon juice and water.

Sift dry ingredients together.
Add to creamed mixture.
Add in nuts.

Chill the dough

Drop by teaspoonfuls on floured paper and roll into balls

Place on cookie sheet and bake 10 - 15 minutes, until light brown on the bottom (not on the top)
Roll each cookie in powdered sugar while warm
