NOTE: This recipe has 2 different dressings to choose from.
HERB and RED WINE VINEGAR 2 T red wine vinegar 5 T good quality EVOO 1 level tsp salt 1 heaping tsp freshly ground black pepper 1 heaping T chopped fresh marjoram 1 heaping T chopped fresh basil 1 heaping T chopped fresh parsley 3 T finely chopped shallots
OLIVE OIL and LEMON JUICE DRESSING 2 T fresh lemon juice 5 T good quality EVOO 1 level tsp salt 1 level tsp freshly ground black pepper

Directions: |
Directions:1. Start with about 1 lb of potatoes (it's important to use evenly sized new potatoes and you may either scrape or peel them).
2. Cook potatoes in boiling, salted water and try to cook them perfectly so they don't fall off the blade of a knife when you stick in to potato.
3. As soon as potatoes are done, drain them and put them into a bowl. Cut into halves or thirds.
4. Very important to add your dressing at this stage, while the potatoes are still steaming hot. Dressing won't penetrate the potatoes if they are too cool.
If using the Red Wine Dressing: Mix together all ingredients, adding shallots last. |
