4 c. coarsely chopped McIntosh apples
2 c. sugar
2 eggs, slightly beaten
½ c. vegetable or canola oil
2 c. flour, spooned into cup
2 tsp. cinnamon
1 tsp. salt
1 c. chopped walnuts
2 tsp. vanilla
2 tsp. baking soda

Directions:
Directions:
Combine apples and sugar; let stand. Beat eggs, oil and vanilla until smooth. Mix together flour, baking soda, cinnamon and salt; stir into egg mixture alternately with apple mixture. Blend in walnuts. Pour into buttered and floured pan (13 x 9 x 2-inches). Bake at 350º one hour or until an inserted toothpick comes out clean. Let it stand in pan until quite cool; turn out on rack when cool.
