10 eggs
½ c. flour
1 tsp. baking powder
Dash Salt
2 cans diced green chili's
1 pint cottage cheese OR sour cream
1 lb. cheddar cheese, grated

Directions:
Directions:
Beat eggs in a large bowl, until well blended. Add flour, baking powder, and salt. Stir well.
Add both cans of diced green chilies (these are not hot chilies), cottage cheese OR sour cream, and cheddar cheese. Stir until combined.
Line a 9x13 pan with parchment paper. Pour into the pan and bake at 400º for 15 minutes and reduce heat to 350º, bake for another 35 minutes.

If you have a hot oven, the dish may be done after 20 minutes at 350, following he 15 minutes at 400.
This recipe has a quiche like texture so don't over bake it.
The recipe does call for 1/4 c. butter to be melted in the pan before the egg mixture is added. I omit the butter because the recipe is very rich without it. I think the butter makes it a bit "greasy".
