1 lbs. ground beef
1 large onion, chopped
1 envelope taco seasoning (or check my Taco Seasoning recipe)
1 can (4 oz.) chopped jalapeños, green chili or one bell pepper
1 c. cornmeal (masa harina)
2 c. water with bouillon or beef or chicken broth
1 can (14 oz.) whole kernel corn, drained
8 oz cheddar cheese, shredded
1 can (14 oz.) tomato sauce
1½ tsp. chili powder

Preheat oven to 375ºF. Grease baking dish (2½ qt or 9x13x2). In bowl mix cornmeal and water; put mixture at bottom and sides of dish. Brown ground beef in large skillet over medium heat. Add chopped onion and jalapeños/peppers; cook until onion starts to become translucent. Add taco seasoning and stir well; pour into dish. Pour corn evenly on top of beef mixture; sprinkle on cheese. Mix tomato sauce and chili powder; pour over cheese. Bake for 25 minutes.

This recipe is a big part of my childhood. My mom, Mimy, used to make this for dinner parties, and it was the BEST.
Since she used to only (in general) make it for those parties, I used to think that it was really hard to make or something. Later I found out that it's actually really simple to make, and that made the recipe even better. The juices from the meat soak into the cornmeal crust, the cheese melts into the corn, everything about this dish is great, and it's different (at least, I've never seen tamale pie since moving to Hawaii), making it a great dish to bring to parties.
