14 ¾ oz can of Red Sockeye Salmon
2 stalks Celery (finely chopped)
2 - 3 Tbsp dried Parsley
4 oz jar sliced or diced Pimientos
2 - 3 Tbsp dried, chopped or sliced Onion (or fresh)
2 eggs
2 rounded Tbsp Flour

Directions:
Directions:
Drain juice from salmon. Break up salmon with fork. Add celery, parsley, pimento and onion to the salmon. Break in two eggs and stir. Stir in flour. Mixture will be consistency of a batter.

Fry in pan with a small amount of Pam, butter or oil heated on low to medium flame. Fry on one side until crisp and turn with a spatula or egg-turner. Brown until crisp on other side.
