Stock Base

Ingredients:
Ingredients:
Whole chicken
3 qt. chicken stock
1 clove garlic
2 bay leaves
1 tsp. salt (or to taste)
½ tsp. pepper (or to taste)
1 tbl. parsley
2 stalks celery, finely chopped
2-4 carrots (your preference), chopped
1 yellow onion, chopped

Directions:
Directions:
Rather than using purchased chicken broth, you can slow boil the whole chicken with the bouillion, salt, pepper, 1 stalk of celery, onion, bay leaves and garlic. When the chicken is falling off the bone, strain the broth into a bowl and debone the chicken. Put the chicken and the broth back into a pot on the stove and bring them back to a low boil. Add fresh celery, carrots and parsley at this time. While the carrots and celery are cooking prepare the dumplings.

Dumplings

Ingredients:
Ingredients:
2 c. flour
1 tsp. salt
Water (start with 1/2 cup, you can add up to 1 cup if necessary)
1/2 tsp. baking powder
2 tbl. butter

Directions:
Directions:
Mix dry ingredients together. Cut butter into mixture. Add enough water to make a thick dough. Knead five or six times. Roll dough out onto a lightly floured board or cloth to about 1/8 inch thick. Cut into squares then drop into the boiling chicken and stock mixture. When the dumplings are floating, the Chicken and Dumplings are ready to serve and eat.

Personal Notes:
This is one of my grandmother's recipes that we just love! As the instructions suggest, I usually make my own chicken stock with the ingredients listed.
