1 lb pkg Lima Beans
1 medium onion, chopped
2 small pieces of salt pork
Salt & Pepper to taste

Directions:
Directions:
Rinse beans thoroughly making sure all debris is out. Place in pan and cover with water. Chop onion and add to beans. Add salt pork.
Cook about 2 hours or until tender.
Very good-Sometimes I cook with out salt pork.

Personal Notes:
Salt pork - similar to bacon but saltier and not cured/smoked. Used to flavor beans, greens, and other southern dishes. Really adds to flavor. Found in the pork section of meat market-not next to packaged bacon.

If you have hard water, use bottled or distilled water to cook any beans.
