Ingredients: 5 lb. potatoes 1 jar Hellman’s mayonnaise 1 mediumm jar pimento stuffed manzanilla olives 6 hard boiled eggs 1 tbsp. Salt 1 tsp. Pepper 1 tsp. Celery salt (optional) Paprika (optional)

Directions:*Hard-boil 6 eggs (4 for salad, 2 for garnish) *Peel and dice potatoes into 1 inch cubes *Place in pot covered with cold water *Bring to a boil then reduce heat and cook 10-15 minutes until done *Be sure to check with fork at 10 min. so they do not over-cook, keep checking every couple of minutes until they are your desired consistency *Drain potatoes then add to ice to cool them off immediately *Drain again and let them dry for about 10 min *Transfer to a large bowl, large enough to stir in ingredients *Add ˝ of the potatoes then add 2 tbsp. olive juice from jar – drizzle over potatoes *Add the other ˝ of potatoes and repeat with another 2 tbsp. of olive juice *Let potatoes soak in the olive juice for about 5 min *Scoop 1 large tbsp. Hellman’s mayonnaise and gently FOLD into potatoes (I use a frosting spatula) *Add ˝ jar of olives (whole or diced, your preference) *Dice 4 hard boiled eggs and add ˝ to the salad mixture *Add and keep mixing may until you reach your desired creaminess *Add remaining eggs and olives to taste *Add 1 tbsp. salt *Add 1 tsp. pepper *Add 1 tsp. celery salt (optional) *Garnish with 2 sliced hard boiled eggs and whole olives *Dash paprika for presentation |
