Crust:
1½ sticks (¾ c.) vegan butter or regular butter
⅔ c. brown sugar
2 c. Gluten-free flour
1 c. walnuts, finely chopped

Filling:
(2) 8 oz. pkg. cream cheese or tofutti
½ c. sugar (or Stevia)
1 tsp. vanilla
2 eggs
(3) 2.1 oz. Butterfinger bars, crushed

Preheat oven to 350º F.

Crust:
In the bowl of your mixer, beat the butter and sugar together until smooth and fluffy. On low speed, blend in the flour. Add the nuts until just incorporated. Save 1 c. of the crust mixture and press the rest of it into bottom of an ungreased 9x13" pan. Bake for 10 minutes. Cool slightly.

Filling:
Wipe out the mixing bowl and beat together the cream cheese and sugar until smooth. Add the vanilla and eggs. Beat for 2 minutes. Fold in the crushed candy and spoon over crust. Sprinkle the reserved cup of crust mixture on top.
Bake for 30 minutes or until cheesecake layer is set. Cool to room temperature before cutting. Store in refrigerator.

*Dessert is Gluten-free. Can be made dairy-free as well by substituting vegan butter for butter and tofutti for cream cheese or neufchatel cheese.
