Swedish Pancakes Recipe

1¼ c. milk
1 c. flour
⅓ c. sugar
3 eggs
1 tsp. vanilla
4 Tbsp. melted margarine (additional margarine will be needed in the skillet to cook the pancakes)

Mix all the above ingredients with a blender or a mixer (I prefer blender). I make the pancakes in a 10" skillet or you can use a crepe pan. Melt margarine in the hot skillet. Pour pancake mix into ⅓ c. measuring cup not quite to the top. With the margarine melted in the pan, pour the pancake mix in the skillet, making sure you gently tilt to cover the bottom of the pan. Cook on stove until bottom starts to get golden brown. Flip and cook the bottom. If the pancake is too thin, add more flour. If the pancake appears too thick, add milk.

I usually place the cooked pancakes in the oven on low temperature (170º F.) to keep them warm until I have enough to start serving at least 2 or 3 people.

Serve: We usually pour syrup on individual pancakes or fruit and whipped cream and roll the pancake. Some people like to sprinkle powdered sugar on top of rolled pancakes for appearance.
