Corn Fritters Recipe

Tereasa Rima


1 cup flour
2 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. onion powder
1 tsp. Cajun seasoning
2/3 cup milk
1 beaten egg
2 tbsp. melted butter
2 cups frozen corn (thawed)
2 tbsp. canola oil

In a large bowl, mix together flour, baking powder, sugar, salt, garlic powder, onion powder, Cajun seasoning, milk, egg and butter. Fold in corn. In large skillet over medium high, heat 1 tbsp. canola oil till sizzling. Drop spoonfuls of batter into skillet. Brown on both sides. Add additional oil as needed for additional batches.
