1 cup sugar minus 3 tablespoons
1 cup butter
1 extra large egg
1 tsp vanilla
2 cups flour
½ tsp salt
½ tsp baking soda
½ tsp cream of tartar

Directions:
Directions:
Preheat oven to 400º

Cream sugar and butter, add egg and beat until fluffy. Add vanilla
Sift dry ingredients and add to sugar mixture.
Stir with spoon, mix well with hands until dough can be gathered into a ball.
The dough will be stiff.
Pinch off pieces of dough and roll in balls about the size of walnuts.

Place balls on cookie sheet about two inches apart. Dip bottom of glass in granulated sugar and press each ball with the bottom of the glass to form a circle. The larger the glass/circle the crisper the cookie.

Sprinkle additional sugar on cookies to lightly coat the surface and bake about 10 minutes or until golden brown.
Rmove immediately to wire rack to cool.
