1 1/2 lbs Yukon Gold potatoes, cubed
4 eggs, boiled
1/2 cup mayonnaise
2 Tbsp sweet pickle relish
2 Tbsp juice from relish
2 Tbsp Balsamic vinegar
1/2 tsp cayenne pepper
salt
pepper
paprika

Directions:
Directions:
Boil potatoes until fork tender. Drain and let cool completely. Peel boiled eggs and cut into small pieces. Placed cooled potatoes and eggs into a large bowl. Add mayonnaise, relish and juice, vinegar and cayenne. Season with salt and pepper to taste. Mix well. Sprinkle paprika on top.
