Tomatoes from the garden washed and cored
Chopped vegetables of your choosing such as zucchini, onions, garlic, carrots etc. not to exceed a ratio of 1 part vegetables to 3 parts tomatoes
Coarse salt

!.Heat oven to 325 º and adjust racks to upper middle and lower middle.
Place tomatoes in a single layer in 2 rimmed baking pans until completely full but not stacked. Sprinkle with coarse salt.
2. Bake the tomatoes until they flatten and are very soft. Add the chopped vegetable on top and continue baking for an additional 30 minutes until the vegetables start to brown. Shut the oven off and keep the pans in the oven to allow to cool slowly and lose more liquid.
3 When cooled take the pans out of the oven and process the vegetable in a food processor. At this point you can heat this back up and can the tomato sauce in quart jars in a canner for 30 minutes for quarts. or can be processed in a pressure cooker 10 pounds pressure for 30 minutes. Add whatever herbs and spices when you open the jar and are going to use it. Keeps the flavor better.
