1 cup white flour
1 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 tsp ground ginger
1/2 teaspoon salt

1 cup white sugar
1 cup brown sugar
1/2 cup olive oil
2 eggs, lightly beaten
1 teaspoon vanilla extract
1 (15 oz) can pure pumpkin puree (not pie filling)

Directions:

Preheat oven to 350. Grease a 12-cup muffin tin.

In a small bowl, mix together the flour, baking soda, cinnamon, nutmeg, ginger and salt.

In a medium bowl, beat together the sugar, oil, eggs, and vanilla. Add the pumpkin and mix well. Add the dry ingredients and stir until just combined.

Pour the batter into the muffin tin. Bake for 20 minutes, or until a toothpick comes out clean. Let the muffin tin cool on a wire rack for 10 minutes then remove the muffins.

This made 12 very large muffins which took 30 mins to bake.
