1/2 cup maple syrup
1/3 cup packed light brown sugar
4 tsp vanilla extract
3/4 tsp salt
1/2 cup canola oil
6 cups old fashioned rolled oats
1/2 cup oat bran
2 cups chopped pecans

1. Adjust oven rack to upper middle position and heat oven to 325 º Line a rimmed baking pan with parchment paper.

2. Whisk maple syrup sugar and vanilla and salt together in a large bowl. Whisk in the oil. Add the pecans and oat bran and stir to get them all thoroughly coated. Add in the rolled oats and stir to mix.

3. Transfer the oat mixture to the baking pan and spread across the sheet evenly. Press down with a spatula that has been coated with non stick spray. Get the oats compacted. Bake until lightly browned 40 -45 minutes rotating the sheet halfway through baking. Remove the sheet from the oven and let cool on a rack to room temperature about 1 hour. Break the granola into pieces of desired size. Store in air tight contained at room temperature.
