2 cups frozen corn (thaw)
cup cornflakes
1 peach finely sliced
2 teaspoon olive oil
sprig finely cut coriander
a few finely cut mint leaves
2 tablespoon lemon juice
1 teaspoon sugar
2 tablespoon desiccated coconut
1 finely sliced onion (pickled in lemon)
1 red bell pepper (+1 pimento pepper optional)
pomegranate seeds to garnish
strawberries to decorate
salt and pepper to taste

Directions:
Directions:
1. Mix all the above ingredients to thawed corn in a bowl except sliced strawberries
2. Decorate with sliced strawberries
3. Add the crushed cornflakes just before serving.
4. Serve cold
