Cauliflower Corn and Cucumber Salad Recipe

Ingredients: 2 cups cauliflower florets 2 small cucumbers 1/2 red pepper 2-3 green onions 1 (15 oz) can corn, drained 1/3 - 1/2 cup mayonnaise (instead, I used about equal parts Chobani plain non-fat Greek yogurt and mayonnaise with just a little squeeze of lemon to taste - gives it more flavor!) Fresh dill, optional (I used fresh but could use dried) Salt and pepper to taste

Directions:1. Cut cauliflower into small florets. Slice cucumber into thin slices (I peeled mine first, then halved & quartered lengthwise, then cut crosswise in bite size pieces). Cube the red pepper (again bite size pieces). Thinly chop the green onions. Drain corn. Mix all veggies in a large bowl. 2. Add mayo/yogurt mixture, salt and pepper to taste, mix well. Add fresh (dried) dill (optional). You can make ahead and refrigerate (at least for a couple of hours- stir well before serving.
