3 T unsalted butter...
2 shallots, finely chopped...1 pound button mushrooms, thinly sliced...
1 T fresh lemon juice...
2 T port wine...
2 cups of whipping cream...
1 pound tortiellinis meat, cheese or lobster filled...
Directions:
Directions:
Over low heat melt butter...
Add shallots and a pinch of salt and cook 5 minutes...
Toss mushrooms with the lemon juice...
Add these to the pan of shallots and turn up heat to medium and cook for 15 minutes or until most liquid is gone from pan...
Now add the port wine to the mixture and cook 3 minutes...
Now add the cream to mixture and simmer 10 minutes or until mixture thickens enough to coat back of spoon...

While the sauce is thickening, cook the tortellinis according to pkg. directions..
Strain tortillinis and divide into 4 bowls, add mushroom sauce over tortillinis, top with a chopped basil or parsley and serve...

When adding shallots, mushroom, wine or cream to mixtures, stir every couple of minutes or more frequently if items start to brown up too quickly...
