2 1/4 c. flour
1 c. sugar
3/4 c. chocolate chips
1/2 . cocoa
2 t. baking powder
1 t. baking soda
2 eggs
1 c. sour cream
1/2 c. milk
1t.vanilla
1T. instant coffee
1/2 c. oil
1/2 c. chocolate chips for top

Directions:
Directions:
Preheat oven to 400º, Mix flour, sugar, cocoa, baking powder, baking soda with a whip. Add the chips and mix with a spatula. Whip eggs, sour cream, milk, vanilla, and oil until smooth. With the spatula or on very low speed mixer, add the dry ingredients just until combined. Spoon into muffin tins prepared with paper liners. Sprinkle the additional chips on top of each muffin. Bake in hot oven for 18 to 20 min. until a pick comes out clean in the center. Let cool in pan for 10 min, then remove to a rack until completely cool. Makes 14 regular size muffins or 12 regular and 12 minis. Mini only bake for 10 min.
