2 Japanese cucumbers
1 small purple onion (or white sweet onion)
1 red bell pepper
1 bottles Mae Ploy sweet chili sauce (10 oz.)
Cilantro and/or juice of 1 lime (optional)

Directions:
Directions:
Dice ingredients fine. Mix all ingredients together. Refrigerate overnight to meld flavors. Serve with corn chips (suggest Tostitos Scoops! Corn Chips).
