4 boneless skinless chicken breasts, cooked and shredded
2 cans cream of chicken soup
1 cup mayonnaise
⅛ tsp curry powder (or to taste)
juice of 1 lemon (or to taste)
1 cup grated cheddar cheese
4 or 5 carrots
3 broccoli crowns
salt and pepper to taste

Trim broccoli into florets. Peel and cut carrots into 2" pieces. Lightly steam carrots and broccoli (optional). Mix together soup, mayo, curry powder, and lemon juice. Mix a small amount of the soup mixture with the shredded chicken (enough to moisten it). In a 9x13 baking dish layer carrots, then chicken and sprinkle with salt and pepper. Top with broccoli and sprinkle with salt and pepper and then the cheese. Pour remaining soup mixture over broccoli evenly. Bake at 375º for 40 minutes or until golden brown and very hot.
