4 boneless skinless chicken breasts
flour for dusting
2 Tbsp olive oil
6 Tbsp butter
cup minced parsley
juice of 1 lemon

Directions:
Directions:
Rinse chicken and pat dry. Pound breast to an even thickness. Dredge chicken in flour to coat. Heat oil plus 2 Tbsp of butter in a large skillet until hot. Brown chicken until just cooked turning once.Remove to serving platter and keep warm. Reduce to low heat and add remaining butter. When it begins to bubble remove from heat. Stir in lemon juice and parsley. Pour over chicken and serve with rice.
