6 pieces bone-in chicken
1 Tbsp olive oil
1 Tbsp butter
1 onion, thinly sliced
cup chicken stock
cup dry white wine
1 bay leaf
1 tsp dried tarragon
1 tsp freshly ground pepper
1 cup sour cream

Directions:
Directions:
Heat oil and butter in a large 10-12 inch skillet until hot. Place chicken in skillet skin side down and top with onion slices. Sprinkle with salt and pepper. Cook over medium heat 5-7 minutes per side or until golden. Add the chicken stock, wine, and bay leaf. Cover and simmer, turning occasionally, until tender (about 25 minutes). Add the tarragon and pepper and continue cooking an additional 5 minutes. Stir in the sour cream and cook until thoroughly heated, but DO NOT BOIL. Transfer the chicken and sauce to a serving dish. Serve with chicken flavored or long grain wild rice.
