3/4 pound of large shrimp, peeled, deveined and tails on...
4 4 oz. beef filets...
1/3 cup Cajun blackened seasoning, mixed with 1/4 cup vegetable oil...
Thin strips of lettuce and mild mixed greens, such as arugula, Boston lettuce, etc.....
1 small onion, sliced thin...
1 large tomato sliced into wedges....

I use San Marino tomatoes and just cut them in half, lengthwise...

Coat the shrimp and beef with the Cajun seasoning mix, you can use all the mix or as much as you like...
Heat a heavy skillet, cast iron is best, over high heat, once hot add shrimp, cook 2 minutes per side and remove to drain on paper towel...
Next add the steaks, cook to desired doneness, medium rare, cook 3 minutes per side, remove and let them rest for 5 minutes...
You can grilled both shrimp and steaks, too... I prefer grilling as I like the flavors of the grill..
Once steaks have rested, slice thin, 1/4 to 1/2 inch...

In the mean time while steaks are resting, make the plates of lettuces, onions and tomatoes...
Add the shrimp and steaks to the top of salads and serve...

Have 2 or 3 salad dressings available for your salads, such as oil and vinegar, blue cheese or ranch...
All dressings can be made before hand or you can serve dressings from your local store...

Serve with a crusty bread and good red wine...
