2 lb Yukon Gold potatoes
3 small onions, chopped
1/4 cup canola oil
kosher salt & black pepper
13 oz smoked Polish turkey sausage
rosemary leaves from 2 stems

Directions:
Directions:
Wash potatoes, cut to 1/2" chunks. Heat oil over high heat. Stir potatoes & onions to coat. Cook 10-12 minutes stir to avoid scorching. Season w/pinch of salt & pepper. Cut sausage diagonally to 1/4" slices. Chop rosemary. Reduce heat to medium, stir in sausage & half the rosemary. Cook 10-12 minutes, stirring often till potatoes are crisp. Add rest of rosemary, salt & pepper.
