3 c. flour
3 c. peeled, diced apples
2 c. sugar
1 tsp. salt
1 tsp. Baking Soda
1 tsp. ground cinnamon
1 c. vegetable oil
2 eggs (lightly beaten)
c. chopped pecans
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350 F.
Spray 2 - 12 c. muffin tins with cooking spray.
In a large bowl, combine flour, apples, sugar, salt, baking soda, and cinnamon.
Stir in the oil, eggs, pecans, and vanilla.
Fill muffin tins to the top.
Bake 30 minutes.
Cool on wire rack for 5 minutes before removing from pan.
