2 c cubed fresh mango
1 c chopped red pepper
1/3 c minced red onion
1/4 c chopped fresh cilantro
1T minced jalapeño
2 T lime juice
2 T olive oil
pinch of salt

* can add chopped fresh tomato or chopped avacado

Directions:
Directions:
Combine all ingredients just before serving

To mellow the red onion, may soak it in the lime juice for 5 minutes before adding other ingredients
If adding avacado, hide avacado pit at bottom of serving bowl to keep it from turning brown

Delicious served as an appetizer with chips, or as an accompaniment to grilled fish or pork
