1/2 C shortening
1/4 C sugar
1 beaten egg yolk
1 Tbl grated orange peel
1 tsp grated lemon peel
1 tsp lemon juice
1 C cake flour
1/8 tsp salt
1 slightly beaten egg white
1/2 C finely chopped walnuts
9 candied cherries - halved

Directions:
Directions:
Thoroughly cream shortening and sugar. Add egg yolk, orange and lemon peel, and lemon juice.

Blend completely. Sift in flour and salt. Chill until firm. Form dough into 1/2" balls. Dip in egg whites & roll lightly in nuts.

Press half a cherry in the center of each cookie. Bake at 325 for about 20 minutes or until very lightly browned. Cool thoroughly on rack or can crumble.

Yields 1 1/2 dozen
