6 medium potatoes
6 Tbsp of butter, softened
1 ½ cups grated sharp cheddar cheese
1 cup sour cream
2 green onions, thinly sliced
garlic salt and pepper to taste
paprika for dusting (optional)

Directions:
Directions:
Wash and dry potatoes and prick each potato with a fork several times. Bake at 450º until tender all the way through. You can also microwave the potatoes to save time. When cool enough to handle cut in half lengthwise and scoop out the pulp into a mixing bowl. Add remaining ingredients and mix well. Mound the mixture into the potato shells dividing evenly. Dust lightly with paprika if desired and bake at 375º until very hot and edges are golden brown (20 minutes or so).
