10-15 roma tomatoes

2 lemons

2 limes

1 bunch of cilantro

1 yellow onion small

1 small jalapeno pepper

small jar of peppercinis


kosher salt

-I mix every thing together in a food processor, it seems to blend together better
-Cut your tomatoes in quarters
-About 1/3 of your cilantro stems and all
-Half of a small yellow onion cut in half
-1 half the pepper unless you like it real hot then use the whole thing, I would cut that in small chunks
-A dash or 2 of cumin powder, a sprinkle of kosher salt, about half cup of peppercinis, the juice of 1 whole lemon and lime
-You want to reserve your other lemon and lime til after you mix everything to get that right level of freshness and acidity........Pulse everything together in you processer til you get your desired consistency
