"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

unbaked pie crust
⅓ c. sugar
¾ t. cinnamon

Topping:
⅓ c. sugar
¾ c. APF
6 T. chilled butter

Directions:
Slice apples thinly. Arrange apples in pastry shell. Mix sugar and cinnamon, sprinkling mixture over apples. For the topping, mix sugar with the flour; cut in butter until crumbly. Add 1-2 T flour until crumbs are "just right". Best if crumbs are not too heavy. Sprinkle over apples. Bake at 400 ºF for 35 to 40 minutes or until done (check pie early around 25 minutes). If top browns too quickly, cover loosely with foil. When done the apples are soft and juicy.
