2 cups heavy cream
1 (5 oz) pkg Boursin cheese with herbs
3 lbs red potatoes (unpeeled), scrubbed and thinly sliced
1 1/2 tbs chopped fresh parsley

Directions:
Directions:
Butter 9x13 baking dish
Heat heavy cream over medium heat with Boursin cheese until cheese melts.
Arrange half of sliced potatoes in baking dish in overlapping rows
Season with salt and pepper
Pour in half of cheese mixture to cover potatoes
Arrange remaining potatoes in overlapping rows on top of potatoes in dish
Season with salt and pepper
Pour remaining cheese mixture to cover potatoes
Bake at 400º for about 1 hour until potatoes are tender
Sprinkle with fresh parsley.
