2 boneless, skinless chicken breasts
2 egg whites
2 tsp. cornstarch
juice of 1/2 lemon
1 cup Panko break crumbs
1tbs. fresh, chopped parsley
1 tsp. kosher salt
1/4 tsp. black pepper
zest of lemon
1/2 cup parmesan cheese
4 tbs. olive oil

Directions:

1. cut chicken in half.  Pound to 1/4 inch. Or use chicken tenders
2. combine egg whites, cornstarch, and juice of lemon in bowl, whisk
3. combine the rest of ingredients in another bowl and mix
4. put chicken in egg white mixture then bread crumbs, coating heavily
5. let chicken rest on rack for 20 minutes
6. heat oil until very hot
7. cook chicken on each side until crispy
8. transfer to oven at 450 degrees and cook for 8 minutes
