Olive Oil
2 lbs beef stew meat (cut into 1 inch pieces)
2 cups chopped leeks or white onion
2 cups chopped carrots
4 garlic cloves, minced
6 cups water
1 1/2 tsp salt
1 tsp thyme
1/2 tsp pepper
4 bay leaves
2 - 14 ounce beef broth
1 cup pearl barley

Directions:
Directions:
Heat large soup pot over medium-high heat add oil, brown beef on all sides
Add leek, garlic and carrots, saute 4 minutes or until lightly brown
Return beef to pan, add water and next 5 ingredients, bring to a boil, cover, reduce heat and simmer about 1 hour. Add barley and simmer till tender and serve.
