2 (6 ounce) cube steaks
1/4 cup plus 2 tablespoons all purpose flour
1/2 teaspoon salt, plus more to taste
1/2 teaspoon black pepper , plus more to taste
1/2 teaspoon paprika, plus more to taste
1 cup vegetable oil
2 tablespoons chopped tomato (optional)
1 tablespoon chopped onion (optional)
1 1/4 cups milk

Directions:

Pat steaks dry; set aside. Combine 1/4 cup flour and 1/2 teaspoon salt, pepper and paprika on a plate; stir with a fork until well blended. Coat each steak with flour mixture . Pound slightly on sides with a rolling pin or flat side of a meat cleaver to help meat absorb flour. All flour should be used.

Heat oil in a skillet until it reaches 375. Line a plate with paper towels. Add steaks to skillet; cook until seared and well crusted on one side, about 2 minutes. Turn steaks with tongs; cook2 minutes more for medium, Transfer steaks to a plate; keep warm.

To prepare gravy, pour off all but 2 tablespoons cooking oil from skillet. Return pan to medium- low heat. Whisk in remaining 2 tablespoons flour; cook 1 minute. Add tomato and onion (optional) . Cook till onion is tender and clear. Whisk in milk; cook until thick, 3 minutes. Add more milk if gravy becomes too thick . Season to taste with salt, pepper & paprika.

Mama use to make this and mamaw Corrie did also. But they never put tomatoes in the gravy. Mamaw served it with mashed potatoes and the gravy was so good on them. Mama served just the steaks with home fried potatoes without gravy, or mashed potatoes if she made the gravy. It was one of daddy's favorite meals. Notice this recipe is for 2 servings.
