4 eggs
1 3/4 C (16 oz can) solid pack pumpkin
1 C sugar
3/4 C firmly packed brown sugar
1 C vegetable oil
2 C flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

Beat eggs in large mixer bowl. Add pumpkin, sugars, and oil, then mix. Add remaining ingredients and beat until well-blended. Spoon batter into paper-lined muffin tins. Bake 350º for 20 minutes until toothpick inserted in center comes out clean.

Frosting:
Combine 3 oz. cream cheese, 1/4 C butter, 1 tsp. vanilla, and 2 C powdered sugar in small mixer bowl. Beat until light and fluffy. (I usually double the frosting recipe because it's all about the frosting for me! Also, I add more powdered sugar because I like it to be a little thicker. I decorate with candy corn.
