1 8-ounce can crushed pineapple
1/4 cup sugar
1 Tbs cornstarch
1/4 tsp salt

8-ounce carton heavy whipping cream, whipped

Directions:
Directions:
1. Mix sugar, cornstarch, and salt together in a small saucepan. Add can of crushed pineapple and stir well.

2. Turn on heat (to medium) and cook, stirring constantly, until mixture starts to boil. Once mixture boils, continue stirring and cook for 5 minutes. Mixture should lose its milky look and thicken.

3. Cool pineapple mixture completely. Gently fold into whipped cream. Use on jello.

Note: To use the finished whipped cream as frosting for a cake instead of just a topping for jello, use 1 Tbs + 1 1/2 tsp cornstarch (instead of just 1 Tbs).

Grandma Bolton used to always make pineapple whipped cream to put on top of her fizzy jello. So yummy. :) This also makes good topping for citrusy cakes.
