Quick Pickles

1 Cup shredded carrots (about three large carrots
1 cup Daikon Radish (About 1 daikon)
1 cup cucumber (about 1 English Cuke)
3 Tb rice wine vinegar
3 Tb sugar
1 Tsp kosher salt.

In a large bowl , toss together the carrots, radish, cucumber, vinegar, sugar and salt. Allow the mixture to sit for a least 30 minutes. If preparing ahead of time, cover and refrigerate. Note: It will smell horrendous the following day, but will still be good to eat. (You've been warned!!)
 

Burgers


Ingredients:

1 1/2 lbs ground beef
1 tsp kosher salt
sliced jalapeņos
cilantro
1/2 cup mayo
1 1/2 Tb sriracha

Directions:
Directions:
1) Preheat grill to 450 degrees. For the burgers, gently mix the salt into the ground beef using your fingers. Shape into 5 patties and place a small thumbprint in the center of each one. Grill the burgers for about a minute on high heat, then reduce the heat to 350 degrees and continue to grill until liquid begins to form on the top of the burger, and it easily lifts off the grate. Flip and grill until the internal temp reaches 145 for medium rare and 160 for medium well.

2) To serve, place the burgers in buns and top with cilantro, jalapeņos, and pickled vegetables.

3) Mix together the mayo and sriracha and spread on top.
